Petra is a specialty baker for Mom's Apple Pie Company, a family-run bakery with four locations in Northern Virginia. By the time she was born, the family business had been operating from their home for three years. Petra and her siblings grew up rolling crusts, peeling apples and baking pies with their parents from early on. In addition to bakery experience, Petra trained with family friend, Is Harris, making a variety of Thai cuisine from scratch, punctuating her culinary appreciation for both sweet and savory flavors and techniques. Subsequent training in oenology and cuisine both in Florence, Italy and Washington, DC led to her current position as wine buyer and recipe research and development at Mom's Apple Pie in Occoquan, Virginia.

How to Make Quiche

Ingredients

1 cup of cream
5 eggs
1/3 cup of milk

1/2 cup of Gruyre cheese
1/2 cup of chopped ham

Pie crust
Spinach
Red bell peppers
Mushrooms
Appalachian cheese

Instructions

1. Break the eggs on a flat surface. Beat them gently with a whisk before adding the other liquid ingredients, cream and milk.


2. To make quiche Lorraine, add the Gruyre cheese and chopped ham together and put them in the crust. Pour the egg mixture over it. Put it in the oven for 45-50 minutes at 375 degrees.


3. To make a vegetable quiche, add the spinach, mushrooms, peppers and Appalachian cheese to the crust. Pour the egg mixture over it. Place it in the oven for 45 minutes to an hour at 375-400 degrees.

Petra Cox: Hi, I am Petra Cox with Mom's Apple Pie Company in Occoquan, Virginia and today, I am going to show you how to make a really fantastic quiche. You can start with your own homemade crust or a crust that we make here is a butter crust or you can even do a store bought crust and we will show you how to make the most basic base for the quiche and a few different ways that you can put together a quiche. You could do a Quiche Lorraine or a vegetable quiche if you like. There is lots of ways to go with it and we will show you the most basic recipe to make a really nice, soft, custard-like quiche. Let's get started.

So, here we are in the kitchen at Mom's Pies in Occoquan and we have all of the ingredients that we are going to need to make our quiche. We have two pie crusts here, they are frozen and we have our vegetables for our vegetable quiche, we have chopped spinach and we have red bell peppers and mushrooms, we have a whole bunch of different things here. We have got Gruyre cheese and we have chopped ham and we have Virginia cheese called Appalachian and for our most basic part though, we are going to just combine a cup of cream and five eggs and a third of a cup of milk and that's going to be the most basic part of our crust. So let's get started.
