Hi! Im Robert Nassar from Dinner Done. We are working on vegetable prep and now were going to show you how to dice an onion. First things first, though, your vegetables should always be clean before you ever lay a knife to them. With onions since youre going to be peeling the outer skin first thing you want to do is take that outer skin off, cutting both ends and then lightly running the blade of your knife and peeling the skin. It doesnt matter that youve washed or not the onion at this point because at this next step is when you want to wash it. You want to be sure to wash your vegetables all the time. You never know whats on them. They can come with dirt. Dirt has bacteria and you certainly dont want to suffer through that. So, once youve got your onion nicely washed its very simple really to dice. Were going to make two series of cuts and then a third cut to dice. So, our first cut is going to be not all the way through in this sense, make about a quarter inch or so, not much more than that unless you want really big chunks and once youve gone across the onion, youre then going to turn at 90 degrees, think of it as making a grid and do the same thing. Dont cut all the way through because you dont want the pieces to fall apart quite yet. And as soon as we get done here well show you how the actual dicing occurs. Now, okay heres the best part. Put the onion on the side and then make your cuts and thats how youll end up getting these nice squares, most already separated for you. The rest of the onion you can then lay down on the table and finish cutting like so. But, now youve got all the diced onions you probably ever going to need and thats how you dice an onion.
