Filling the need for healthy meals, while getting families back around the dinner table is a major reason for Dinner Done's success. His international background and love of travel have given Robert a unique perspective on foods and ingredients, and how best to marry them to obtain new tastes and flavors. When coming up with new recipes for his customers, Robert can draw upon this experience to enable them to try new ideas without sacrificing taste or nutrition. A self confessed recipe book addict, he has accumulated over 50 cookbooks in 3 languages. These rarely stay on a shelf, as he uses them almost daily!

Dice a Mango

Ingredients

1/2 cup of Mirin wine-based vinegar
2-3 tablespoons of Rice wine vinegar
Diced red onions
1/2 of a mango
1 medium-sized tomato
Red, orange and green diced bell peppers
Parsley
Cilantro
Chives
Fresh basil leaves
Fresh mint
1/4 teaspoon of salt

Instructions

1. Dice the mango into small pieces and chop up the herbs. Dice up the tomato, onions and bell peppers.


2. Pour the Mirin on the chopped herbs. Add the rice vinegar, diced mango, tomatoes, onions and bell peppers. Mix it all together.


3. Let it refrigerate overnight. Before serving, add 1/4 teaspoon of salt.

Hello! I am Robert Nassar from Dinner Done. As part of making our mango salsa I wanted to show you how to dice a mango. When you go to the store to look for mangoes, look for those that are firm, yet not rock hard, you dont want anything mushy either. Make sure that you wash very well the outside of the mango. Once you have got that taken care of, place a cutting board down with a towel underneath it so that it doesnt slip on you. Take a sharp knife, I am putting the mango on one of its sides; make a cut down and through. Once you have done that you are now going to score this bowl of mango if you will, and then I will show you how to turn it inside out and get the dices out. Very carefully and without letting the knife slip through the skin, make some cuts in a square pattern across and across again, and now comes the front part. All you need to do is flip that skin inside out and there you got your diced mango. Take a knife and very gently separate the meat from the skin. If any of the pieces stick together a bit, you will be able to go back with the knife, and separate them further. Make sure that if you have got any skin that came through that you get rid of that as well. At this point perhaps just a couple of slices to separate the pieces, and you are ready. You can then, make other cuts, always careful to avoid the large pit thats in the center of the mango like so, and get the rest of the meat out, and thats how you dice a mango.
