Radio personality and gourmet cook Rob Carson shows how to create two delicious wraps for a filling lunch.
Assembling Two Awesome Lunch Wraps
Ingredients
Tortillas
Spinach
Sun-dried tomatos
Hummus
Pepperoncini
Sun-dried tomato pesto
Turkey
Provolone
Red onion
Japanese cucumber
Romaine lettuce
Tomatoes
Fresh basil
Instructions
1. Microwave the tortillas for 15-30 seconds.
2. To make an Italian wrap, mix the sun-dried pesto with the hummus and spread it on the tortilla. Place basil, turkey, Romaine lettuce, provolone, tomatoes and onions in the tortilla and wrap it up.
3. To make a vegetable wrap, spread hummus on a tortilla. Add Romaine lettuce, tomato, pepperoncini, onions, bell peppers and alfalfa sprouts to the tortilla and wrap it up.

Rob Carson: Once again, my name is Carson. I am a radio personality and a gourmet cook. Today, we are making awesome lunch wraps. I have microwaved briefly our tortillas to soften it up a little bit between 15-30 seconds depending on the strength of your microwave. You don't want to overcook them because it will get hard. You don't want to undercook them because they will crack when you fold them up. So, we are going to get started. I have got a basic hummus here. You can make your own hummus. You can buy your hummus. I go to the wholesale club and buy it and it's very cheap and it's delicious. I am going to make an Italian version one and then I am going to just do the straight turkey with veggies over here.
So I am going to go ahead. Should I do the sun-dried or the regular pesto what do you think? Sun-dried, okay alright, we will do it, thanks. I am going to go ahead and mix some of this sun-dried tomato pesto in my hummus and you can buy hummus flavored of course, there is dozens of flavors. There is roasted red pepper hummus, there is jalapeno hummus and all that stuff. I am just choosing because I have a plain hummus to dress it up a little bit. So I am going to make a little strip of it right here, right in the middle and because I am making an Italian version I am going to start with basil. Some nice basil leaves. This is going to be beautiful. It is going to be good.
You know you could actually add prosciutto if you are going to do it up like this. I am going to use turkey today. I have got my Romaine lettuce here. Remove this. We will cut the end off get rid of that. Make sure my leaves aren't wilted. We got some good leaves here. There we go; we will run it right up the middle. You can use a little more if you want or a little less, it doesn't matter. I am going to add my turkey. I am going to add a little provolone. You can do it with cheese or without. I just prefer with cheese, some tomato, some beautiful red onion. Let's go ahead and put a couple of different colors of peppers in there. It just makes a little pretty, doesn't it? Alright, now here's how I do it. You do the same thing when you are wrapping a baby. You make it what I call a baby burrito. You just fold over like that, you leave the end open and there you have your Italian wrap ready to go.
Let's go and make another one. You can wrap this up in aluminum foil and it will hold together. Let's go ahead and make another one, shall we? This one, we are just going to do basic plain hummus. Again, we are just going to do a strip down the middle. Instead of using a high calorie condiment or a salad dressing, we are just using this now. If you want to add like vinaigrette on top of it, it will really help it. It will really make it good. It is also good like this.
So I am going to take my lettuce of course, this nice Romaine lettuce. I like hearts of Romaine, it works really beautifully and it's perfect shape too. I have got my turkey. You can do a veggie version of course. I am going to go ahead and I am going to skip the cheese on this one. Let's go ahead and add our tomato. I am going to do some of these pepperoncini salad peppers in here because these are fantastic and they really, really add a lot of flavor. Let's do some onion. Let's add our pepper. I love the peppers for color; I love the peppers for flavor. Bell peppers are fantastic. I am not really crazy about green peppers, but I love bell peppers and on top of here I am going to take some alfalfa sprouts guys. Alfalfa sprouts by themselves taste like dirt but on a sandwich they actually taste good. So there is our lighter veggie and turkey wrap. I am going to get some more aluminum and wrap this one out. So here you go guys we have just wrapped up literally, wrapped up a great lunch for your kids, for your sick elder, for yourself. These are awesome. People pay a lot of money to go to nice delis and buy these. You can make them at home and buy the ingredients and make them for weeks on very little. So they are awesome lunch wraps, enjoy.
