Sandy Sheppard: Hi! I am Sandy Sheppard, I am a master cake decorator, and I am here today to talk about picking a pan to help you make a more professional cake. Now, many of the pans that you find in the stores will look similar to this, and the fact that the sides of them are slightly slanted. Even the round pans will have a slanted side, and I dont own any of those, so I cant even show that to you. What you want to look for to make a more professional looking cake is a pan that has a very straight or vertical side all the way around because then when you are ready to stake, especially if you are using a square cake and you are staking two layers together, they are going to be nice and straight, one on top of the other, whereas if you start two of these together you are going to have a slant here and then a slant here because the edge here is going to be slightly larger, than this side. So, obviously in a round pan the same thing, you want something with a nice straight side. It also helps if its a fairly solid good thick pan.
