Holiday Side Dishes - Roasting Sweet Potatoes

Ingredients

3 lbs. sweet potatoes

Ground cinnamon

Nutmeg

Cloves

Light brown sugar

Butter

Molasses

Lemon juice

Duck confit( sausage opt*)

Salt

Pepper

Instructions

1. Preheat oven 425F, large dice, toss in vegetable oil w/ salt- pepper &  roast yams until just soft. Remove from oven, set aside. Pick duck leg confit.

 

2. Combine 2tbsp molasses, 1tsp lemon juice & 6oz butter in sauce pan over med heat add ¼ tsp of dry ingredient except salt-pepper and make syrup consistency.

 

3. Place warm yams & duck in bowl. Add syrup to taste. Add salt and pepper to taste.
