How to Make Salmon Encroute

Instructions
1. To make the egg wash, crack a few eggs in a bowl and whisk them together. Brush the puff pastry dough with the egg wash.
2. Place the spinach leaves upside down on the puff pastry dough. Add the salmon and season it with salt and pepper.
3. Fold the dough together like an envelope and brush it with egg wash.
4. Place the salmon puff pastry on a tray in the oven for 10-15 minutes. Plate and serve.
